Tomato, Feta & Honey Toasts

Turns out, simple is best when it comes to tomatoes! (Thank you for all of your comments the other day, we’ll announce a winner soon!). Meanwhile, I wanted to share this one last little tomato combo that I’ve been obsessed with. It’s simple but genius, although I can’t completely take credit for it. It was straight off the little info sheet Whole Foods sent me with suggested uses for the various heirloom tomatoes. One of them said “pair with briny cheeses like feta or a drizzle of honey.” So I did both together. Try it, it’s amazing… Especially with a good flavorful honey (I like this one) and a few basil leaves.

On another note, I’m so excited – in the next few weeks we are heading to Japan, by way of Seattle… let me know if you have suggestions for where to eat in Seattle (I’ve never been!)… or any suggestions on where to stay in Tokyo…

Ingredients
  • crusty bread, such as ciabatta
  • olive oil
  • heirloom tomato slices
  • good feta, the fresh kind that comes in brine
  • good flavorful honey
  • salt & pepper
  • fresh basil
Instructions
  1. Toast or grill your bread, and drizzle with olive oil and a bit of salt.
  2. Top with sliced tomatoes, salt & pepper, feta, honey, basil, and another drizzle of olive oil.
Notes
Pictured are a few different tomato varieties, although the deep flavor of the Cherokee Purple works especially well here.
