Baked Parsnip Fries

Swap potatoes for parsnips to make these healthy baked parsnip fries! Great with your favorite burger, they're irresistibly crispy, sweet & salty.

Happy Fri-day! (pun intended, I’m so sorry).

What I’m not sorry about are these parsnip fries – they’re awesome and super simple to make. I recommend making extra because you (or your significant other – I’m not naming any names here), will likely eat most of them right off the baking sheet, and you’re going to want a few left to enjoy with your burger.

Not only are these parsnip fries healthier than traditional fries (they have much more fiber), but they have a unique flavor. If you’ve cooked with parsnips before, you know that they’re slightly sweet. As a result, these crispy fries have a fantastic sweet & salty taste that makes them totally addictive.

If you don’t gobble them up straight off the pan, they’d be great with any of the following recipes:

Ingredients
  • Parsnips
  • Extra-virgin olive oil
  • Sea salt
  • ketchup and/or mayo
Instructions
  1. Preheat your oven to 375F.
  2. Scrub your parsnips clean and lightly peel them (you don't have to peel them if yours are really clean). Slice into thin strips.
  3. Toss with a drizzle of olive oil and a few good pinches of salt.
  4. Bake 15-25 minutes, or until golden brown, flipping halfway.
  5. Remove from oven and serve immediately. These are best hot.

    Mayo is definitely best on a classic BLT. Fresh lettuce, fat tomato slices, and crispy bacon. Yummmmmmm.

    Truffle Aioli w/ Truffle Parmesan Sweet Potato Fries
    So simple, just as your fries! I do the same thing with sweet potatoes but use VOM FASS Truffle EVOO to coat. Just out of the oven, toss with a little more Truffle EVOO and shredded parmesan. Then for the aioli:
    3/4 cup mayonnaise
    3 VOM FASS Truffle EVOO
    ¾ teaspoon VOM FASS Truffle Salt
    ½ teaspoon ground black pepper
    Mix all and refrigerate for 30 minutes.

    Ketchup mixed with sriracha on EVERYTHING! Im crazy strange and even dip pototo chips, english muffins with cream cheese, scrambled egg whites, fried calamari…the obvious: fries, burgers, chicken strips. So yum as a mix in for meatloaf, BBQ sauce, etc. I am the self proclaimed “bubba gump” of ketchup 🙂

    I would love to try all of these condiments! Ketchup is my favorite but I love putting both ketchup and mayo on my veggie burgers. And I can’t wait to try the parsnips!

    I like to make jalapeno refried black beans to stuff inside pupusas, and I always add a dollop of mayo to my black beans. For ketchup, definitely on tofu scramble or on a baked potato!
