Goji & Mango Guacamole

Even if you're a guac purist, you'll love this mango guacamole. Sweet goji berries, mango & lime cut through the avocado, making for a light, fresh dip.

Goji & Mango Guacamole

Hi everyone, Jack here again. Super Bowl Sunday is right around the corner and you know what that means? Dip! Even though I’m not traditionally in love with avocado, I love the way Jeanine makes guacamole, and plus, nothing says “go team” like go-ji, right? Right?

Now you may be thinking “oh, Jeanine has Jack writing this because he’s a football man or something.” Well, I have to admit, team sports are not my thing. Three things that ARE my thing, and the reasons I’m manning this post, are Super Bowl parties, food dipped in other food, and goji puns.

This mango guacamole is as stealthily healthy as a Super Bowl snack gets. The goji berries are a bit of a secret weapon here, as they plump up and become really tangy and sweet. Along with the mango and lime, they also really cut through the thickness of the avocado, so everything still feels light. Plus, the goji berries help to turn your Super Bowl snack into a Super Bowl super food.

We love this fun, fresh mango guacamole for game days or summer cookouts. It's easy to make, vegan, and gluten-free.

Recipe type: appetizer/snack
Serves: 4-5 as an appetizer
Ingredients
  • 3 ripe avocados
  • juice of 1-2 limes
  • coarse sea salt
  • 1 ripe mango, diced
  • ⅓ cup dried goji berries
  • ⅓ cup diced red onion
  • ½ - 1 jalapeño, chopped
  • handful of chopped cilantro
  • tortilla chips
Instructions
  1. Place goji berries in a small bowl with a bit of water for just a few minutes until they plum up.
  2. Remove the avocado pits and scoop each avocado into a medium bowl. Add generous squeezes of lime and plenty of sea salt. Lightly mash the avocado with the back of a fork.
  3. Stir in chopped mango, goji berries, red onion, jalapeño and cilantro. Add salt and pepper (and more lime if necessary), to taste. Serve immediately.

    This looks like the perfect way to add some freshness and sweetness to a Superbowl spread. Good fresh mango could be hard to come by this time of year where I live, but I’m thinking I could defrost and use frozen. Anyone have any experience doing that with a recipe like this?

    Love guacamole and mango, but I’ve never added goji berries! Sounds super yum! I always add some pomegranates, but will definitely try with goji berries next!

    I never would have thought of adding goji berries to guac – it’s such a neat idea but I bet it tastes great! I’ve only recently started branching out into adding other ingredients in guacamole. I mean, why mess with a good thing? But this seems like it could be a way BETTER thing. Can’t wait to try!

    Ha! This is so awesome. I always enjoy a post from Jack to switch things up a little bit. I would ideally ALWAYS have mango in my guacamole, but I love that you also added goji berries. Very cool! I’m on the same page about the super bowl … I only care about food (and kind of ) about commercials.
