Creamed Spinach

This creamed spinach recipe features tender spinach in a rich, creamy sauce. It's one of my family's favorite side dishes for holiday meals!

fall / side dishes

This creamed spinach recipe is the most luxurious way to eat your greens. Inspired by Jack’s mom’s famous creamed spinach (a staple at Thanksgiving, Easter, and other family gatherings), it’s ultra-creamy, rich, and cheesy. If you ask me, it’s just as good as any steakhouse creamed spinach…if not better. While many creamed spinach recipes call for frozen spinach, this one uses fresh. I love the silky texture of the whole, just-wilted leaves in the cream sauce. I think it makes this classic side dish feel a bit brighter and fresher. Make it for a holiday or a simple weeknight dinner.…

Carrot Muffins

Love carrot cake? Then you HAVE to try these carrot muffins! Moist, fluffy, and warmly spiced, they're a delicious breakfast or grab-and-go snack.

breakfast

These carrot muffins combine two of my favorite things: carrot cake and muffins! They’re moist, fluffy, and warmly spiced, with plenty of grated carrots, chewy raisins, and crunchy walnuts mixed in for texture. Unlike my carrot cake cupcakes, which are firmly in dessert territory, these healthy carrot muffins are a great grab-and-go breakfast or snack. I love that they taste like carrot cake while packing in some more nutrition. They freeze perfectly too. When you have time on a weekend, make a big batch and stash it in your freezer. If you’re anything like me, you’ll love having these carrot muffins…

Grits and Eggs

This grits and eggs recipe is delicious for breakfast or any meal! Fried eggs, fresh veggies, and dashes of hot sauce top a comforting bowl of grits.

Did you catch the guide to how to make grits I posted the other day? I’m following it up with this easy grits and eggs recipe, which might be my favorite way to eat grits. As much as I enjoy creamy grits on their own, I love them even more with flavorful fixings. In this recipe, I top the rich, creamy corn porridge with sautéed greens, bursty cherry tomatoes, avocado, and—of course—a fried egg. Hot sauce (any kind you like!) adds a little tangy, spicy pep to make the eggs and grits a delicious, comforting meal. I love this recipe…

Through years of enjoying grits together, I’ve become a huge fan too. I shared a grits recipe in my second cookbook, but I only recently realized that I’d never posted one here. That changes now! Below, you’ll find our simple method for how to make grits, plus tips for cooking them and serving suggestions. I hope you enjoy! Ingredients You’ll Need Here’s…

These black bean tacos are a really easy, SUPER flavorful dinner. They’re packed with a delicious combination of simple ingredients: black beans, pickled cabbage, cilantro, jalapeños, and Cotija cheese. A hefty drizzle of my cilantro lime crema takes them over the top. I love the balance of textures and flavors here. These black bean tacos are creamy AND crunchy, earthy AND bright. The component that really makes them pop is the pickled cabbage. It adds a burst of sweet, tangy flavor that, if you’re me, will keep you piling on more and more. I recommend prepping the pickled cabbage ahead.…

Spring is just around the corner, but I'm not done with soup season quite yet! Join me in making my cabbage soup for a hearty St. Patrick's Day meal.

I know what you’re thinking—“Soup?! But isn’t it spring??” It’s certainly felt like it in Chicago over the past few days. We’ve had a gorgeous stretch of sunny weather that’s made me start craving asparagus, carrot cake, and other spring-y things. But I’m not switching over into full-on spring mode just yet. I’m holding onto soup season until at least March 17. That’s because I make this cabbage soup for St. Patrick’s Day each year. Packed with potatoes, carrots, and a full pound of cabbage, this humble, hearty dish is a delicious way to honor my Irish heritage. My favorite…

Tofu Scramble

This easy tofu scramble recipe is a delicious vegan breakfast! It has a savory, eggy flavor and soft, creamy texture. Ready in 15 minutes!

breakfast / vegan

This tofu scramble is one of my favorite vegan breakfast recipes, if not one of my favorite breakfasts, period. I think it’s just as delicious as classic scrambled eggs. It’s soft and creamy, and it has a rich, eggy flavor thanks to nutritional yeast and a few key spices. Bonus: it’s also high in protein! I love having it in my rotation for mornings when I’m in the mood for a savory breakfast that doesn’t involve eggs. It’s easy to make in one pan, so you can throw it together on a weekday, but with the right fixings, it’s totally weekend-worthy too.…
