Happy New Year!

Today I’m guest posting over at Better Homes and Gardens’ Dish Delish Blog. These granola bars were inspired by their recipe for Chocolate-Peanut Butter Granola Bars, which reminded me of the ones my mom used to pack into my school lunch everyday. I might not have that Barbie and the Rockers lunchbox anymore, but I thought it would be fun to recreate this favorite afternoon treat in a healthier way.

      Hi Carrie, it’s written within the post (sorry, it’s a little confusing): It’s this recipe http://www.bhg.com/recipe/chocolate-peanut-butter-granola-bar/

      with these changes that I made:
      – maple syrup instead of corn syrup
      – coconut oil instead of butter
      – 1/4 cup each of pistachios, pepitas, and goji berries in place of the broken pretzel sticks.

      make them vegan by subbing maple syrup for the honey, and gf by using ground flax seed instead of the wheat germ.

        can you confirm this is the correct recipe? also, what can be substituted for wheat germ? its just not an ingredient i cook with…ever. thanks!
        • Nonstick cooking spray
        • 1 cup regular rolled oats
        • 1/4 cup maple syrup
        • 1/4 cup peanut butter (or almond butter or cashew butter)
        • 3 tablespoons packed brown sugar
        • 2 tablespoons coconut oil
        • 2 tablespoons honey
        • 1 tablespoon vanilla
        • 1/2 teaspoon salt
        • 2 cups crisp rice cereal
        • 1/4 cup pistachios
        • ¼ cup pepitas
        • ¼ cup goji berries
        • 1/4 cup toasted wheat germ
        • 2 tablespoons chia seeds
        • 1/4 cup miniature semisweet chocolate pieces

          Hi Nicole, yes this is correct – I didn’t use the wheat germ either and these worked just fine. So sorry, I’m going to reformat this recipe so it’s not as hard to search for.
