Sweet Curried Almonds

As a food blogger, I use my stove nearly every day without thinking much about it. It’s easy to take things like multiple burners and good ventilation for granted. (Well, except when Jack cooks – we have to frantically open every window to keep the fire department from showing up).

In other areas of the world, women are cooking over a small fires in enclosed spaces that lack light and ventilation. Their kitchens are filled with smoke, making it difficult (not to mention unsafe) to prepare meals for their families. This Mother’s Day, Equal Exchange is working to donate energy-efficient stoves to hundreds of families in Uganda as part of the Uganda Stove Project. These stoves provide families with better, safer cooking conditions, they also reduce their weekly cost of firewood.

The call to action is simple: It’s a giveaway!

And now for the recipe! I made this curry spiced snack mix using Equal Exchange almonds, honey, raisins and dried mango. A perfect afternoon treat – but I’m warning you, it’s pretty addictive.

sweet curried almonds

Serves: makes about 2.5 cups
Ingredients
  • 1.5 cups equal exchange almonds
  • 1 tablespoon coconut oil
  • 1 tablespoon equal exchange hoeny
  • 1-2 teaspoons muchi curry powder
  • optional - a pinch of cayenne
  • a few pinches of sea salt
  • ¼ cup equal exchange raisins
  • ¼ cup equal exchange dried mango, chopped
  • ¼ cup coconut flakes
Instructions
  1. Preheat oven to 350 degrees.
  2. In a small bowl, melt together the coconut oil and honey. Stir in the curry, (cayenne, if using) and salt.
  3. Pour the spiced oil onto the almonds (you can do this directly on a baking sheet lined with parchment). Toss to coat and spread the almonds apart on the baking sheet.
  4. Bake for 10-15 minutes or until toasted. While the almonds are warm, toss mix them with the raisins, mango and coconut flakes. Taste and adjust seasonings.
Notes
If you're vegan: sub brown sugar for honey

    I made this mix last night, absolutely delicious! I even added a small handful chopped up to my oatmeal this morning with fresh peaches. Wow, it added a new dimension to my normal breakfast!

    This is such an excellent cause! People usually underestimate the dangers of cooking in an unsafe environment and that is just unacceptable! I know for a fact that I’m going to be munching on these curried almonds every few hours because they look and sound DELICIOUS!!!!!!!! Need to make a batch ASAP! 😀

    I love equal exchange products. I am a huge fan of their chocolate and coffee but had no idea they sell dry goods too. I will have to be extra careful next time I am in Whole Foods to see if they carry them.

    What a wonderful initiative for improving cooking conditions. I witnessed this kitchen environment first hand in the remote highlands of Guatemala while doing research there, and I’m happy the issue is gaining more awareness and resources. And wow, these curried almonds look amazing with the mango bits. I can’t get muchi curry powder here in Switzerland. If I mixed my own starting with a generic sweet curry blend as a base, do you have any suggestions for particular add-ins? Thanks!!

      That’s amazing, (sounds like an interesting research trip, for sure).

      The spices in my muchi curry powder are: turmeric, cumin, ginger, black pepper, coriander, fenugreek, garlic, celery seed, cloves, cayenne pepper, caraway, white pepper, and mace… which is a lot but I’m sure you could combine the first few on the list for a similar flavor (even just turmeric, cumin, salt and pepper, would be delicious).
