Veggie Thanksgiving Recipes

fall / entertaining / thanksgiving

a veggie thanksgiving recipe guide / loveandlemons.com

Can you believe Thanksgiving is next week?! Neither can I… although we’ve been cooking up a storm of comfort foods in order to post recipes here before the holiday. By this time next week I’m sure I’ll be craving sushi rather than stuffing. But until then… here’s a bunch of recipe inspiration in case you’re in need of T-day ideas:

pictured above:

Roasted Squash with Apple Salsa  /  Roasted Cauliflower & Leek Soup
Poblano Cornbread Stuffing  /  Roasted Beet Pear & Walnut Salad
Butternut Squash & Leek Risotto  /  Quinoa Stuffed Acorn Squash
Apple Spice Cocktails  /  Mini Vegan Pumpkin Pies

We made a new “Holiday: Thanksgiving” category in our Recipe Index, click here to see every recipe that I’ve tagged as a Thanksgiving possibility.

If that’s not enough, check out this Veggie Thanksgiving Pinboard I’ve been working on that’s full of deliciousness from all around the web.

Happy meal planning!

The poblano cornbread stuffing was to die for! We usually make a traditional cornbread stuffing but this year we decided to spice things up to go with our cranberry salsa! It was a great idea!

Sweet blog! I found it while surfing around on Yahoo News.
Do you have any suggestions on how to get listed in Yahoo News?

I’ve been trying for a while but I never seem to get there!

    Thank you

Here we’re not gonna celebrate Thanksgiving, but we have to plan a “Thanks-for helping-us-with-the-moving” lunch/dinner (which actually counts as a kind of thanksgiving), so this comes really helpful! 🙂

Yummy recipes! The roasted beet salad looks like a great beginning, the acorn squash will be the substantial middle and oh how the pumpkin pie will be the perfect ending!
