Whole Grain Flax Waffles

Whole grain vegan flax waffles // loveandlemons.com

Admittedly, I’m not the best at baby showers. I forget that the point of a baby shower is the gift-showering part, and I usually show up with an amazon print-out of what I purchased off the registry that morning. (really, I mean well). So this is my kind of baby shower… the virtual kind where I make and eat waffles and snap a photo. No pink bows required.

Melissa (of The Faux Martha) is a dear friend I’ve met through the blogosphere. Her beautiful blog is filled with delectable sweet treats and her waffle recipe is one of her signatures. When I met her in person last January, I remember she kept talking about how much she craved waffles. I hadn’t met anyone who was so passionate about waffles… but hey, as a fellow food blogger, I understand these fixations. Of course, it made complete sense when a week later she announced she was pregnant!

This is a spin on Melissa’s waffle recipe, using ingredients I had on hand… which of course isn’t normal ingredients like wheat flour and butter, but instead – coconut oil, spelt flour, millet flour and flax seed. They’re super delicious – a little crispy on the outside, but still soft in the middle. And I love mine with berries and doused with good maple syrup.

Serves: serves 2 (makes about 4 square waffles)
Ingredients
  • ½ cup whole spelt flour (gluten free: sub ¼ cup each of brown rice & sweet rice flour)
  • ¼ cup millet flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 3 tablespoons melted coconut oil
  • 1 tablespoon sugar
  • ¾ cups almond milk
  • 2 tablespoons ground flax seed
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • serve with: seasonal fruit, butter, and more maple syrup
Instructions
  1. Preheat your waffle iron.
  2. Sift together the dry ingredients (except for the flax). Whisk together the wet ingredients and the flax.
  3. Mix wet and dry ingredients together and cook the batter according to your waffle maker's timing, or until golden brown and crisp on the outside.
  4. note - I put my waffle maker on high and let them cook a bit longer than the initial "ready beep."

    What a great recipe roundup! My old roommate had a waffle maker which meant I would make waffles all the time, but I don’t live with her any more and sadly that means no waffle maker for me. But…. you and the other bloggers in this roundup are convincing me it’s time to buy my own!

    I love seeing what everyone came up with for this post. I sure hope we’ll be able to meet one day and have brunch in person! I’ve been adding flax to all kinds of things lately, so I’ll have to put a tablespoon in my waffle batter this weekend.

      The brown rice/sweet white rice combo really does work well for waffles – I find them to be a little grainy for other baked goods, but they give waffles a nice crisp texture on the outside (which is what I prefer to soft doughy waffles). Let me know if you give it a try!

    This made me laugh! I am always too practical for baby showers — I end up writing a check for baby’s college fund and people always look kinda disappointed, like, “That’s not cute at all!”

    I love adding different grains to my breakfast. It really gives it a good texture. This weekend, I made whole wheat pancakes with oatmeal, flax seed, and chia seeds. It was hearty and delicious!

    Jeanine, your post had me laughing all the way through! I’m the same with showers and gift giving in general. This kind of shower is perfect! And, yes, I have a mad addiction to waffles. We’ll see if it subsides after this babe comes :). Now that I have 10 new recipes to try, I think the love will continue! My husband always tells me I post way too many waffle pics on instie. Ha!
